Master Chef Victor Lee, at Jia Wei, move to Singapore sparked an interest in a more modern take on Chinese home-cooking. Using social media to keep up to date with the latest trends, Victor’s style can be described as classically flavor-full with rather unique Western twists. Victor credits his brother as his greatest inspiration, who jeopardized his own career in order to fund Victor through culinary training in Malaysia. Victor was able to win a gold medal in two competitions in 2014: The Lee Kum Kee International Young Chef Chinese Culinary Challenge and the Taiwan International Culinary Exhibition event. “My most valuable memory at the Grand Mercure was cooking an eight course banquet for The Roxy Foundation Charity Event with Mr Goh Chok Tong.” Victor was proud to use his skills in order to help families in need in the surrounding area of the hotel. Jia Wei can be described as exquisite contemporary oriental cuisine, offering both authentic and fusion dishes.
