Equinox Swissotel The Stamford’s Chef de Cuisine Paul Hallett left rural South Wales at the young age of nineteen in order to pursue a profession in cooking. “My Granddad, a jack of all trades, sparked my interest in cooking,” says Paul. “I spent a lot of time with him as a child. The way he was able to monotonously replace a car engine then break down a lamb and make a stew was totally mesmerizing.” Paul’s great interest in butchery was fostered in London where his boss, mentor and now best friend, Ollie Coullaude, put him up in a room above a butcher where he ended up working on his days off. Having already fed royalty, The Duke and Duchess of Cambridge, Johnny Depp and the entire Manchester United team, Paul would relish the chance to whip up a burger for his rock idols Jimmy Hendricks and Iron Maiden. Greatly influenced by his global travel and experience in Michelin restaurants in Europe, Equinox is a combination of Modern European cuisine and Asian. Paul’s cuisine is constantly evolving creating a different experience every time you return.
