Justine Lee takes the Singapore Sling to a whole new level of femininity swapping pineapple juice for berries and a top-up of sparkling water to create a slightly deadly but refreshing cocktail. Having worked in the food and beverage industry for over ten years, she has quietly but confidently managed to work her way to the position of Senior Lounge Bar Executive. Her most unique invention is a Grand Orange Tea, a sweet and zesty concoction made with a special tea liqueur for Chinese New Year. Her greatest achievement and memory working at Novotel was managing a poolside party of 600 guests, blasting out a variety of cocktails and drinks. “It was incredibly stressful but so much fun, I would love to do it again,” she says. Justine is a fun loving spirit and loves taking part in some whacky hospitality events from waitressing relay races to pouring the perfect pint at the Amazing Waitressing Awards.
