The Bar and Billiard Room at Raffles Hotel Singapore is an experimental hub for Bar Captain Andy Lim where he concocts fantastic variations of Raffles classic cocktail menu. “Born and bred in Singapore, my interest in bartending was sparked after I tried my very first and favourite cocktail, The Old Fashioned,” says Andy. “I was truly mesmerised and decided that I wanted to be on the other side of the bar creating this magic.” Since then, Andy’s dedication to mixology has gained the recognition of Singapore Tourism Board (STB). His signature Sakura Sling, commissioned by STB in collaboration with Japan, was created using Dassai sake to mark the 50th anniversary of diplomatic ties between Singapore and Japan. A keen scientist growing up, Andy is currently working on molecular cocktails, mingling chemistry with flavour profiles that will be sure to tickle your taste buds.
